Dear Adot, Really not bad, but the way you preparing the "Tripe" (Cheguara) a bit odd to me, may be you are making it in that way due to healthy and safety point of view. What I know the main ingrediant to make dulet is the "Tripe" but with out scrapping the out side of it, which gives the test and texture of dulet, with out that, the dulet test like eating roasted lamb or goat skin (Yebege or yefeyel koda). What you supposed to do was removeing the inside part of the "Tripe" (chegura) such as the dirt and the fat that left on it and then, soak it in vinegar or lemon for 10 to 15 mints not hot water and it will be clean and all the bad smell will disappear, then you can choppe and mix them with other ingrediant such as, red meat, liver, kiddney, onion, green chilli…etc, and cook. All in all, I can say it is great, your way of doing dulet is very similar with Eritrean household I saw so many years ago in Asmara, may be you are from there. Sorry about that I am not saying you are doing something bad, but, If you want to really, know or see the true test of "Dulet" go to "Gondere" household or the people from Gonder. I am not exaggerating, Gonder is where you can see and teste the perfect "Baltena" all direction from Injera to shero wot, then you will agree with me hundred percent. By the way I am not "Gondere". I recomend the the video clip of youtube name "Enat". She managed to do a wonderful "Yagerbet Dulet" (lebleb and welldone) using proper "Gondere Baltena".
