This delicious vegan, gluten-free Ethiopian Cabbage recipe (Atakilt Wat or Atkilt Wot) uses cabbage, carrots, potatoes, and simple spices for a flavor-packed meal. Ethiopian cabbage, carrots and potatoes are called Atakilt Wat, while Ethiopian cabbage and potatoes are called Tikil Gomen. I learned this recipe when I used to work in Addis Ababa, and it’s approved by my Habesha friends!

I hate Ethiopian food. It always makes me lose a lot of weight in no time. Not just because eat less food but because, apart from the overcooking of veges in palm oil, it’s very healthy. All fresh. Little fat. Few carbs. No sugar.

I just made a soup version (minus the potatoes, add other veggies) of this dish the other day and had no idea! I put mine over chopped/boiled potato or over rice. What a perfect dish for the winter, or really any time of year. Delicious!

What are your thoughts on adding some higher protein ingredient to this (I'm thinking lentils, canned beans, or maybe even tofu)? I know that starts to stay away from more traditional preparation.

First, thank you for uploading the recipe. I cooked it today and both my wife and I liked it and will have it again. My wife doesn't like things too spicy, so I thought I'd be on safe ground with this recipe. To find exciting things to do with cabbage, which I love, is a bonus. I think cabbage gets a bad press and you just need to get creative! Greens roasted on a tray in the oven doesn't work for me. They're far better done on the stove top.

I'm neither vegan, nor vegetarian, but I don't mind having a meatless meal every now and then. I'm really excited to see recipes from Africa. I only had the opportunity to have that kind of food a couple times, but it was really good both times. I've been wanting to try some recipes at home.

Ya know I toasted all the spices first and I added everything to my crock pot a cooked for 4 hours. It was so good there were no left overs my family practically licked their plates clean ?

Thank you! This was delicious. I had a handful of cherry tomatoes and tossed them in too. I have a little trouble with your youtube channel though. The sound is so low that I have to put my volume at the highest setting, and then sit with my ear next to the speaker. It's the only channel I have trouble with, so I'm wondering if there's a setting I can adjust to fix it? (I'm useless when it comes to tech!) This recipe was definitely worth the effort, though It would help if you'd include the printed recipe.
