Have you notice? your knife is a bit doggy, I mean it is not sharp enough, I can see you are stargling with it, try to sharpen it. and you mention about the tripe (cheguara) back home is looks green, that is right, the reason why it is greener is that our cattles are organic grass fed, not like here in Europe or America feeding other product such as grinded bone even animal product which make it unhealthy and dangerous, so the one you got here is whiter and got a lot of smelly staffs that you can smell and see when you are washing them, how ever I am not saying it is not healthy what you have, because I do not know where you bought it, and hope it is okay. And one more thing or "Tip" from me, You should only wash and scrap the inside part of tripe (cheguara), not the out side part, it is only needed to be washed with vinegar or lemon and warm water not boiling water, otherwise it lose it natural Chegura test, I think.
