I know what your feeling right now. My Ethiopian coworkers would make me dishes all the time when we were in the office before COVID. Man of the are vegans which is why they have many vegan dishes to choose from. The wot are the yellow lentils you were enjoying.
I went to an Ethiopian Restaurant in Atlanta with 5 associates. We all ordered different dishes. And let me tell you there wasn't a plate with any food left on it! ha Tab let me know when you ready to book that trip to Africa.

Demera is the holyday a day before Meskel (a Christian holiday in the Ethiopian Orthodox churches). It is to commemorate the discovery of the True Cross by the Roman Empress Helena the mother of Constantinople the Great (the Eastern Roman emperor from 306 to 337) in the fourth century. Led to by the Holy Spirit, she had a vision to burn a camp fire. The smoke came down and indicated where the true cross of the Christ Crucified was buried. The Queen gave half the cross to Ethiopia. To this day Ethiopians celebrate the camp fire day (Demera) and the founding of the true cross day (Meskel).
